Eggplant Parmesan

Italians are a little obsessive about knowing where their food comes from, and we don’t mean the way Americans are increasingly concerned about how far away their food was grown or prepared. In Italy, people like knowing a dish came from their region and they are very proud of that dish. It’s a quirky fact about Italians that makes the history of Melanzana alla Parmigiana, or Eggplant Parmesan, all the more interesting.

So where did it originate? Depending on which Italian you grab on the street, it hails from either Parma in the north (Parmigiana means “in the style of Parma”) or in southern Italy where eggplants grow plentifully.
