For me, cheese soufflé is the ultimate comfort food. My mother, who was no fancy cook, would make it at least twice a year because she found it easy, and she knew that soufflé made my father and me extremely happy. When she would announce that it was soufflé night, we could hardly contain ourselves. To this day, just the thought of piercing through a golden crust to reveal a tender puffed cloud of cheesy, airy eggs makes me swoon.
